We can’t get away with talking about Gajar ka Halwa and NOT giving you a recipe, right? Well here we have it, get to it then, and tell us how it was!
Gajar ka Halwa Recipe
Carrots 1 kg
Small cardamom 6
Almonds 10
Pistachio 10
Sugar 2 cups
Chopped walnuts ½ cup
Dry milk powder 2-3 cups
Oil 1 ½ cup
Silver paper for garnish
Method to make The Divine Gajar Halwa!

Peel and grate 1 kg carrots.
Method without milk:
1. Dry the water of the carrots by covering and cooking on low heat, keep stirring occasionally.
2. Then pour 1 ½ cup oil in the pan and add in 6 small cardamoms. Then add in grated carrots and cook. Add in 2-3 cups dry milk, 2 cups sugar and 1/2 cup walnuts or any dry fruit of your choice and let cook further.
Method with milk:
Boil the carrots in a cup or more of full fat milk. You can add some water to dilute it. Once the milk has dried up, continue as part 2 above.
When the oil begins to separating, the halwa is ready.
Smart Tip: Leave the Halwa on low heat or on a tawwa for an hour or so. Let the the milk powder turn to a khoya like consistency. You will get a lovely bhunna huwa flavour and a deep rich color and texture.
Garnish it with roasted almonds, pistachios and silver paper! You’re ready to treat your Mehmaans and family to the gloriously delicious Gajar Ka Halwa!
