Add flavor to your weekend with this yummy, cheesy Sunday breakfast Casserole! Breakfast is important and if plain fried eggs are not your thing, let’s get it right with this wholesome recipe.

It’s the weekend again! At times we walk into the weekend, tired from the week and the kitchen might be the best place to unwind, especially if it’s a quick & simple one-dish meal. Hear it from us, a good meal, nay, a scrumptious weekend breakfast can lighten your mood and give you a kickstart for the coming week.
So, we bring you the Sunday breakfast casserole, a meal fit for everyone!
What you need
The dish requires:
- 12 eggs
- half cup milk
- 1 cup shredded cheese
- Paprika or red chilli powder
- Salt to taste
- Garlic powder or chopped garlic
- 1.5 kg peeled & shredded potatoes
- 1/2 medium onliin sliced fine
- Veggies of your choice. We used mushrooms, zuchinni & capsicum

Chop the onions and garlic and saute them till transparent. Add the rest of the chopped up veggies, mix ’em and cook ’em until they’re lightly cooked & still crispy and set aside. Then take about a tablespoon of oil & salt (to taste) and mix in with the shredded potatoes!

Next, in a greased baking dish, lay out the veggies & potatoes (in any way you want). Sprinkle half cup cheese. Beat 12 eggs with milk, paprika and salt and pour them onto those veggies. Sprinkle the rest of the shredded cheese to finish off!
A little tip: you can add a bit more cheese and make it super cheesy. Sounds and tastes good!

Once prepped, bake it for an hour at 220C or until golden brown on top. Take it out, let it rest for a few minutes and garnish it with greens.

Serve on its own or with bread rolls. (We’re having ours with some freshly baked cornbread).

The breakfast casserole is rich in texture and flavor. PS, the cheese literally melts in your mouth. And now, you can have your eggs and eat them too, just throw in the cheese!
