Watermelon is about 92% water and ideal in the hot summer days to hydrate the body. It is low in calories so it can help with weight loss. 1 cup has only 46 calories in total. Moreover, it has a beneficial effect on blood pressure as well.
When Sujata sent in this recipe to us, we were appalled! Watermelon with onions! Our Desi hearts just couldn’t bear the thought. However, once we calmed down and decided to give it a go, we were immediate converts.
It’s probably the feta cheese, cucumber and the rocket leaves that add a nice balance to the sweetness of the watermelon and the strong acidity of the onions and balsamic vinegar.
Make this at your next summer dawat and you’re either going to be hailed as the next Gordon Ramsey or you might get a few dirty looks. It mostly depends on the people you’re inviting. Watermelon Salad With A Twist
- 2 cups watermelon
- ½ cup sliced cucumber
- 1 tbsp sliced onion
- 2 tbsp diced feta
- Handful of rocket leaves
- 1 tbsp balsamic vinaigrette
Toss & Serve!
Combine all the ingredients in a bowl and pour the dressing over and mix in. Serves 2.
