When Sujata sent in this recipe to us, we were appalled! Watermelon with onions! Our Desi hearts just couldn’t bear the thought. However, once we calmed down and decided to give it a go, we were immediate converts.

It’s probably the feta cheese, cucumber and the rocket leaves that add a nice balance to the sweetness of the watermelon and the strong acidity of the onions and balsamic vinegar.

Watermelon Salad With A Twist
Ingredients:
- 2 cups watermelon
- ½ cup sliced cucumber
- 1 tbsp sliced onion
- 2 tbsp diced feta
- Handful of rocket leaves
- 1 tbsp balsamic vinaigrette
Toss & Serve!
Combine all the ingredients in a bowl and pour the dressing over and mix in. Serves 2.
