This Vegetable Casserole Recipe Will Make Non-Meat Eaters Rejoice This Eid!

While everyone else is gearing up to devour all the yummy tikkas and kebabs this Eid-ul-Azha, non-meat eaters/lovers are contemplating their Eid menus & figuring out a way to dodge all those meaty dishes on Eid. If you’re one of them, we are here to help! We came across this delicious vegetable casserole recipe by Ruby Ka Kitchen that we’re delighted to share with you. Scroll down to find the recipe!

Ingredients

  • 2 tbsp oil
  • 1 cup chopped onion
  • 1 cup diced potatoes
  • Frozen peas & corn 1/2 cup each
  • 1/2 cup sliced carrots
  • 4 cups of shredded cabbage
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 green pepper
  • 3/4 cup cheese

Batter

  • 4 large eggs
  • 1 cup milk
  • 1 cup yogurt
  • 4 tbsp all-purpose flour
  • 1 green chili or jalapeno pepper diced
  • 1/2 tsp baking powder
  • 1 tsp crushed red pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 3 tbsp oil
  • 2 tbsp cilantro or hara dhaniya

Method

Preheat a pan on high flame. Add 2 tbsps of oil to the pan and add your chopped onion. Add 1 cup of diced potatoes and saute them until they are 80% cooked. After that, add in all the vegetables mentioned in the ingredient list above. Now it’s time to season the vegetables. While they are cooking, add 1 tsp of salt and pepper each. Keep stirring till the vegetables soften. Turn off the stove and keep it aside.

To prepare the batter, in a large bowl, crack 4 large eggs and whisk them. To that, add 1 cup milk, 1 cup yogurt, 4 tbsps of all-purpose flour, 1 diced green chilli, 1/2 tsp baking powder, add in all the spices mentioned above, 2 tbsp cilantro, and finally, 3 tbsp of oil. Mix well. Your batter is ready!

Prepare The Dish

Grease a baking dish with 1 tbsp oil. Once the vegetable mixture has cooled down, mix it into the batter and pour it into the baking dish. Sprinkle 3/4 cup cheese & around 2 tbsp cilantro onto the dish. Preheat the oven to 190 degrees Celcius & place the baking dish in the oven to bake for 35-40 minutes. Once done, sprinkle some crushed red peppers on top of the casserole & serve hot!
