Before We Begin:
On To The Oat Pancakes!
- 1 cup rolled oats
- 1 cup almond milk
- 1 egg
- 1 tsp olive oil
- 1 tsp dark brown sugar, you can use Stevia
- 1 tsp baking powder
- 1/2 tsp baking soda
- Add a dash of cinnamon powder & vanilla extract if you wish
- Blend all the ingredients until they are well combined. I used an immersion blender & blitzed.
- Fry as you would regular pancakes! I poured some light maple syrup on top for the weekend and topped off with berries or bananas, of course!
Hope this quick recipe adds a little fun, flavor and color to your breakfast table. You can enjoy this as an evening snack too with a cup of hot coffee or chai to give you that extra boost!
